Pear and Ginger Glaze Cake Recipe || Foodie Friday
Ingredients:
200g margarine, plus extra for greasing (or butter)
100g white sugar
100g soft brown sugar
2 large eggs, beaten
1 tsp vanilla extract
200g plain flour
2 tsp baking powder
Pinch of salt
2 tsp ground ginger
2 ripe pears, peeled, cored and roughly chopped (1 ripe Pear and 1 Apple works too, if you run out of pears)
Glaze ingredients:
1 ripe pear
1 tbsp brown sugar
1 tbsp white sugar
1 tsp marmalade
1/2 tsp ground ginger
Heat oven to 160C/140C fan/gas 3.
Grease the base and sides of a 24cm cake pan.
Beat the margarine and
sugars together until smooth, then gradually
stir in the eggs and vanilla extract.
Fold
the flour, baking powder and a pinch of
salt into the mix, then quickly stir through
the ground ginger and pears.
Pour the
mixture into the cake pan, smooth the
surface, then bake for 55 minutes
or until a skewer inserted in the centre
comes out clean. Allow to cool in the tin.
To make the glaze, blend ripe pear, sugar and marmalade until smooth. Gently heat mixture in small saucepan. Poke the
surface of the loaf all over with a skewer,
then pour on the glaze. Serve warm with
cream, or allow to cool completely.
