- 200g margarine, plus extra for greasing (or butter)
- 100g white sugar
- 100g soft brown sugar
- 2 large eggs, beaten
- 1 tsp vanilla extract
- 200g plain flour
- 2 tsp baking powder
- Pinch of salt
- 2 tsp ground ginger
- 2 ripe pears, peeled, cored and roughly chopped (1 ripe Pear and 1 Apple works too, if you run out of pears)
Glaze ingredients:
- 1 ripe pear
- 1 tbsp brown sugar
- 1 tbsp white sugar
- 1 tsp marmalade
- 1/2 tsp ground ginger
- Heat oven to 160C/140C fan/gas 3.
Grease the base and sides of a 24cm cake pan.
- Beat the margarine and
sugars together until smooth, then gradually
stir in the eggs and vanilla extract.
- Fold
the flour, baking powder and a pinch of
salt into the mix, then quickly stir through
the ground ginger and pears.
- Pour the
mixture into the cake pan, smooth the
surface, then bake for 55 minutes
or until a skewer inserted in the centre
comes out clean. Allow to cool in the tin.
- To make the glaze, blend ripe pear, sugar and marmalade until smooth. Gently heat mixture in small saucepan. Poke the
surface of the loaf all over with a skewer,
then pour on the glaze. Serve warm with
cream, or allow to cool completely.
