Crumbed Baked Salmon fillets || Foodie Friday





Preheat oven to 190 °C

Serves: 2 Servings

Ingredients:
2 Salmon fillets (approximately the same size) - so that they cook in the same amount of time
1 tsp Margarine (optional) - just enough to lightly cover the top of each salmon fillet
2 tbsp Bread crumbs (1 Tbsp per fillet) - I blended a piece of old bread to make fresh bread crumbs
1 tsp Brown sugar
Lemon zest from 1 lemon
4 tsp Lemon juice (or approx half a lemon's juice)
1/2 tsp dried Thyme
Salt and Pepper to taste (or Lemon pepper if you have it)

Method:
Prepare the salmon fillets by lightly spreading room temperature margaine over the top of the fillet.
Mix the brown sugar, lemon zest and bread crumbs together and place on top of each fillet.
Sprinkle thyme over breadcrumbs, and then lightly drizzle over lemon juice to seal it all together  (approx 2 tsp juice per fillet)

Bake on oven tray for 23-30 minutes depending on the size of your fillets (mine were 135g each and the suggested time was 23 minutes). At 190 °C until the salmon is light pink but still juicy.

I served mine with mashed sweet potato and steamed vegetables. Add the rest of your lemon to the plate when serving.
